Easy Cheesecake Brownies

If you like Cheesecake and Brownies then this recipe is for you! Perfect match of sweet and savoury mixed together into one bite.

Brownie Layer
200 g dark chocolate
150 g unsalted butter
250 g caster sugar
4 medium eggs
1 pinch fine sea salt
100 g plain flour
Cheesecake Layer

110 g caster sugar
1 medium egg
½ tsp natural vanilla extract
280 g cream cheese
Brownie Layer
Preheat oven to 160°C, grease a square tin (aprox. 20 cm) and line with baking paper, leaving a 2-3 cm overhang.
Place chocolate broken in peices in mixing bowl and grate 5 sec/speed 7.
Add butter and melt 4 min/70°C/speed 2.
Add sugar, flour, eggs and salt then mix 1 min/speed 4. Scrape down sides of mixing bowl with spatula then mix again 10 sec/speed 4.
Pour brownie mixture into prepared tin and set aside.
Clean and dry mixing bowl then continue with recipe.
Cheesecake Layer
Place cream cheese, sugar, egg and vanilla extract in mixing bowl then mix 10 sec/speed 4. Scrape down sides of mixing bowl with spatula then mix again 10 sec/speed 4.
Pour cheesecake mixture on top of brownie mixture. Swirl mixtures together slightly with spatula.
Bake for 35-40 minutes (160°C) until set around the edges with a slight wobble in the middle. Leave to cool completely in tin.
Once cool, remove from tin and, using a sharp knife, cut into 9 pieces.
This super easy cheesecake brownie can be enjoyed with cream, ice cream or fruit. Great dessert to make ahead for a party.
