I loved baking long before I owned a Thermomix, but if I'm honest, it was always a bit hit-and-miss. A few degrees too hot, a minute too long, sugar taken just past the stage it needed to be at, and a bake that should have been perfect would end up just... fine. Since a Thermomix came into my life, baking has genuinely gone up a whole level, and it's almost entirely down to one thing: precision.

Anyone who's worked with sugar knows how unforgiving it can be. The difference between soft-ball stage and hard-crack stage is a matter of a few degrees, and traditionally that means hovering over a pan with a sugar thermometer, watching like a hawk, hoping you catch it at exactly the right second.
